Ever since I was little I've loved hot cross buns. I used to love coming home from school and tucking into one that had been toasted and smothered in butter, it was just the ultimate warming delicious snack. Now I'm enjoying my plant-based diet I needed to come up with an alternative, so I've been experimenting in the kitchen and the result is these amazing gluten free, vegan, refined sugar free apple & cinnamon hot cross scones!
Obviously because I use all natural ingredients it's very difficult to achieve a bread or bun like consistency but making scones is pretty easy and I actually prefer these to normal hot cross buns! They're wonderfully warming, totally comforting and mouth-wateringly delicious, especially when topped with homemade jam or almond butter.
I used ground almonds and brown rice flour as the dry ingredients, which work perfectly together and the almonds add such a yummy taste. I used flax 'eggs' (flaxseed and water) to bind everything together, whilst also providing important omega-3 goodness to the bun! For sweetness I purely used apple puree (Biona is my favourite because it's 100% apples), which when paired with cinnamon and a little nutmeg creates the best taste ever!
These hot cross buns may be a nutritional take on the traditional sweet treat but trust me when I say they taste just as good, if not better....and you don't have to feel guilty for eating one (or two!).
