Chocolate Cupcakes With Raspberry Frosting


I've spend months trying to figure out how I could create a healthy cake recipe, one that was refined sugar free, gluten free and vegan and I've finally cracked it!
These chocolate cupcakes are absolutely perfect because they taste just like a normal cake, only they're not full of rubbish but they're completely natural. They're super spongey, wonderfully moist, full of flavour and perfectly sweet - I'm super proud of them!



The best thing about these cupcakes is they're not made with any weird ingredients...I often see healthy cake recipes with all sorts of unusual things in them, like vegetables or exotic things that are hard to come by, whereas my chocolate cupcakes are made with very normal ingredients like ground almonds and buckwheat flour. You still will probably have to go to a health store or order the cacao powder and buckwheat flour online but that can be done easily on Amazon, and they're two staples for healthy, natural baking!

I also absolutely love that these cupcakes don't taste unusual and they certainly don't taste healthy...I mean, who wants cake to actually taste healthy? While they still taste moreish, sweet and incredible they're actually bursting with nutrients and goodness like iron, protein, anti-oxidants, vitamins and healthy fats! Finally, a cake you can eat and know it's doing your body good!

The cake itself is perfect, and the icing on top is amazing too! The cashews make it heavenly creamy and the raspberries add such a lovely sweetness that compliments the chocolate cake so well....a total dream!
