Superfood Rocky Road


Rocky road is such an indulgent, moreish, mouth-wateringly delicious treat everyone loves but the kind you buy in the supermarket is packed full of rubbish that not only tastes artificial but won't do your mind, your skin or your body any good at all. I took it upon myself to create a healthy alternative and I have to say I'm extremely proud of the outcome....this recipe could possibly be the most tasty sweet treat ever. You'd never realise it was vegan and refined sugar free, it tastes too damn good!


Making the chocolate is really easy, all you need is cacao butter, cacao powder, almond butter and pure maple syrup which you melt together to create the most heavenly mixture! The filling ingredients I used were raisins, goji berries, macadamia nuts and roasted buckwheat which all add something a little different to the rocky road - the raisins add a chewiness, the goji berries add a fruity taste, the roasted buckwheat add an amazing crunch and the macadamia nuts add a welcome nutty flavour and texture.

I call this a superfood rocky road as it really is packed full of nutrients and goodness, even though it tastes like a naughty treat! Cacao is actually one of the worlds most antioxidant rich foods  meaning it protects your cells from damage, reduces the risk of free radical damage, improve circulation and promote cardiovascular health. Cacao is also a rich source of manganese and iron. You know I'm all about happiness boosting foods and cacao has been shown to raise the levels of serotonin in your body which is a natural anti-depressent!  Then you've got the almond butter that provides your body with amazing amounts of vitamin E for healthy hair and glowing skin, plenty of protein and healthy fats to reduce your risk of heart-disease.

What I like so much about this recipe is that you can adapt it to your tastes, so if you don't like the filling ingredients I've used just swap them for your favourite foods! You could try cacao nibs, pumpkin seeds, flaked almonds, dried cranberries, coconut chips or date pieces.
