Potato salad always reminds me to Summer. It was always a food I used to eat with a BBQ or something I craved on a warm Summer's evening! Standard potato salad isn't vegan-friendly though, so I decided to put a healthier spin on the classic dish and came up with this avocado & watercress potato salad that is just so creamy and full of yummy flavours!
Watercress is supposedly going to be the next big thing, and no doubt it should be as it's an awesome ingredient to add to dishes. Weight for weight, watercress contains more vitamin C than an orange, more calcium than milk and more iron than spinach as well as lots of vitamin A, vitamin B6 and magnesium which are all needed for a healthy, happy body. Watercress has also been shown to be hugely effective at cancer prevention, especially breast cancer, stomach cancer and lung cancer! It has been shown to reverse the DNA damage done to white blood cells, reduces oxidative stress in the body and lowers bad cholesterol in the body - isn't food amazing?
For even more deliciousness I added spring onions, garlic and coriander to the dish then stirred in the most simple but amazing dressing made of lemon juice, tahini and olive oil. So yum!
