Crispy Thyme Roasted Potatoes & Brussels Sprouts With Cranberry Sauce


Can you believe it's December tomorrow? This year is just flying by! As scary as it is that it's the last month of the 2016 tomorrow I'm so excited because that means it's nearly Christmas!

Christmas is my favourite time of the year, I love everything about it...especially the food. So, of course I'm treating you to a few festive recipes over the next few weeks, starting with my Christmas porridge a couple of days ago and moving onto a recipe for the most delicious crispy roast potatoes and brussels sprouts with cranberry sauce.

 

Everyone loves roast potatoes, don't they? But brussels sprouts seem to be a much unloved veggie. I've always loved them though and believe it's the way you cook them that determines how nice they are; boil them then you're just asking for bland disappointed but roast them with herbs and spices and you're onto a winner! I roasted the potatoes and sprouts with lemon, garlic, thyme and pepper which creates this mouthwatering flavour that can't be beaten. Paired with the zesty cranberry sauce you just can't go wrong!
