Mushroom & Red Pepper Quiche (Vegan & Gluten Free)
Quiche, a food that's normally not gluten free and certainly not vegan but that's about to change! Quiche was something I didn't used to have very often but when I did I really enjoyed it, so I set myself the challenge of creating a healthy, plant-based version and I've got to say...I'm pretty proud of how it turned out. Not only is it easy to make but it tastes so delicious, especially with lots of salad and a dollop of hummus! You can eat it warm straight from the oven of keep it in the fridge for a couple of days to eat cold.
The base of this quiche is made using chickpea flour (or gram flour), oat flour and flaxseed which creates a really simple yet delicious pastry that's entirely gluten free and full of plant-based goodness. Then the filling is made using grated courgette, tomatoes, red pepper, mushrooms and the seasonings which really do add so much to this quiche - basil, oregano, garlic, chilli flakes, salt & pepper! I also added soaked chia seeds which help to hold the ingredients together and give you an omega-3 boost which is essential for a healthy, happy body & mind!
I can tell I'm going to be making this quiche a lot and trying out all sorts of flavour combinations! It's just the perfect healthy and comforting dish to eat all year round.
