Sweet & Sticky Miso Aubergine


I love anything miso flavoured at the moment - I've really been trying to incorporate it into my diet for it's gut health benefits...plus it tastes delicious. This Sweet & Sticky Miso Aubergine is one of my favourite ways to add miso to a recipe, and it makes the best side to so many dishes. Try pairing it with a veggie stir fry, a quinoa salad, some brown rice and broccoli or a tofu salad!



Miso is a traditional Japanese seasoning which is made by fermenting soy beans and salt, resulting in a thick past often used in soups and sauces. Miso has a strong flavour, similar to tamari or soy sauce and is really delicious in Japanese style dishes like stir fries. As it's fermented, Miso also provides the gut with beneficial bacteria that helps us to stay healthy and happy!

This Sweet & Sticky aubergine combines the saltiness of miso with the sweetness of maple syrup and a few chilli flakes which compliment each other so beautifully. When roasted with the aubergine the flavours just come out even more and seep into the soft aubergine, creating something truly special.
