Creamy Lemon & Herb Pasta Salad (Vegan & Gluten Free)


There's still time this summer to enjoy al fresco dining, picnics, BBQ's and light dinners. My favourite thing to make at this time of year is fresh and delicious pasta salads! I love making them to enjoy as they are, or they're particularly amazing with veggie sausages cooked on the barbecue or with some grilled fish.

This vegan creamy lemon & herb pasta salad couldn't be quicker or easier to make, but it'll wow the whole family!


The recipe is really adaptable too! I've cooked up some asparagus, cherry tomatoes and yellow courgette to add colour and goodness to the dish but you could use any veggies you fancy. Try peppers, red onion, garden peas, sweetcorn or even some olives!


The dressing which is made from vegan mayo, lemon juice and olive may sound super simple, but the trio of ingredients work so well to create a truly fresh, creamy, flavoursome sauce for the pasta. I added basil for some herby goodness too, but you could try fresh parsley instead.

Creamy Lemon & Herb Pasta Salad

Pasta salads are perfect for summer time! This vegan & gluten free recipe is creamy, fresh, flavoursome and delicious!

ingredients:

  • 400g gluten free pasta
  • 200g asparagus 
  • 1 courgette 
  • 300g cherry tomatoes 
  • 3 tbsp vegan mayonnaise 
  • 1 tbsp olive oil
  • Juice 1/2 lemon
  • 1 tbsp chopped fresh basil
  • Salt & pepper

instructions:

How to cook Creamy Lemon & Herb Pasta Salad

  1. Cook the pasta according to packet instructions. 
  2. Prepare the vegetables by chopping the asparagus and courgette into bite-sized pieces and halving the tomatoes. 
  3. Place a pan over a medium heat with a dash of olive oil, allow to warm then add the vegetables. Cook for 7-8 minutes. 
  4. Drain the pasta and combine with the vegetables.
  5. Make the dressing by mixing together the vegan mayo, olive oil and lemon juice. Mix into the pasta.
  6. Add the fresh basil, salt & pepper. Mix again.
  7. Serve and enjoy!
